Um, well, we had this last night and this is one of the best meals I have ever had. It was SO good. I think the thing is I am not a big veggie fan and I have to get creative how I will eat it. The food processor and lots of spices are my friend.
So dh made this and I tossed in some big spinach leaves and fresh onions on a whim (not the usual food processing) and it just tasted so fresh and good. Picky big son LOVED it too, Little Monkey, not so much. I swear they are opposite - LOL.
Anyway, dh is making 2 boring meals coming up - I Asked him what his meal plan was. So if all this "weird" stuff scares you off, don't fret. I will try to post whatever we cook.
We got the newest Taste of Home "Light & Tasty" magazine last night and I picked out some mac n cheese and chicken strips to try next week. That is more my speed. My dh has been cooking meals at least 3 nights a week for about 5 years so he is getting to be pretty accomplished at cooking and picks some more difficult things. As for me I have not cooked much in those 5 years - hehe - but I Am trying to pick things once once twice a week to do myself - and cut him a break. I've been trying, not much suceeding. We'll see how it goes...
Oh yeah - on this recipe, dh bought the whole-wheat pitas - came with 4 or 6 or something. So we had enough to make again this week (or maybe he could have double batched it and frozen it too - not sure...). Nice it was easy to make 2 fresh dinners out of the ingredients in 1 week. Frankly the falafel was awesome as a stand-alone - pita not necessary. Was telling my mom because she is diabetic and would probably really enjoy - told here I don't think the bread part is necessary. Would be gret to eat with the spinach and onions alone.
